This lot from La Quebradita in Huila, Colombia, is a blend of Colombia, Caturra, and Pink Bourbon. Three varietals that each bring something distinct to the cup. It’s processed using an anaerobic washed method: after an extended fermentation in sealed tanks, the coffee is fully washed.
The acidity is juicy and fruit-forward, but it’s balanced by a structured sweetness and a tea-like finish. It’s a great showcase of how fermentation can be used to highlight fruit character without overpowering the origin.
